Ingredients
Salsa
- 3 cups chopped peeled peaches
- 1 large tomato, chopped (about 1cup)
- ¼ cup chopped fresh cilantro
- 3 TBSP Veggie Oil
- 2 TBSP white vinegar
- ¼ tsp salt
Chicken
- ½ cup yellow cornmeal
- ½ tsp salt
- ¼ tsp pepper
- 4 boneless skinless chicken breast halves
- 2 TBSP Veggie Oil
Directions
1. Make salsa by mixing all the ingredients together
2. To make chicken, mix cornmeal, salt and pepper. Coat chicken with cornmeal mixture.
3. Heat oil in 10-inch skillet over medium-high heat. Cook chicken in oil for 15-20 minutes, turning once, until chicken is cook through and reaches 165F. Let sit for 5 minutes and serve with salsa over the top
