Salsa / Pico de Gallo

Marinade time - 4 hours to overnight
  • 2 cups Tomatoes. diced small
  • 1/2 cup diced white onion
  • 1/4 cup cilantro. chopped
  • Jalapenos. minced. Amount depends on how much. 2-3 diced up would make a mild, I would say. All depends on taste buds for heat.
  • 1/2 tsp salt
  • 1 TBSP lemon juice  
  1. Mix all ingredients well. Put in a container and stick in the fridge for 4 hours. The longer it sits the better it tastes!
  2. Serve and enjoy :-)
Makes about 2 cups

Uh, I think I told you about getting laughed at calling this Pico de Gallo. You need to call it Salsa Ranchero, unless you don't mind all the Mexicans talking about you in Spanish behind your back. LOL, Glad that you loved the salsa.
