Ingredients:
- 1/2 teaspoon Vegetable oil
- 1/2 onion, chopped
- 2 garlic cloves, minced
- 1/4 cup quinoa, cleaned and uncooked
- 3/4 cup vegetable broth
- 1/2 teaspoon ground cumin
- 1/8 teaspoon cayenne pepper, or more if you like heat
- salt and pepper to taste
- 1 (15oz) can of Black Beans, drained and rinsed
- 1/2 cup frozen corn kernels
- 1/4 cup fresh cilantro, chopped
Directions:
- In a medium saucepan over medium heat, heat oil and stir in onion and garlic. Saute until transparent.
- Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt and pepper. Bring the mixture to a boil. Cover and reduce heat to a simmer for 20 minutes or until quinoa is soft.
- Stir frozen corn and black beans into the quinoa mixture and continue to simmer for another 5 minutes or until corn and beans are heated through. Mix in cilantro and serve.
Serves 4-6 people, as a side dish
