Black Bean and Quinoa


    • 1/2 teaspoon Vegetable oil
    • 1/2 onion, chopped
    • 2 garlic cloves, minced
    • 1/4 cup quinoa, cleaned and uncooked
    • 3/4 cup vegetable broth
    • 1/2 teaspoon ground cumin 
    • 1/8 teaspoon cayenne pepper, or more if you like heat
    • salt and pepper to taste
    • 1 (15oz) can of Black Beans, drained and rinsed
    • 1/2 cup frozen corn kernels
    • 1/4 cup fresh cilantro, chopped

    1. In a medium saucepan over medium heat, heat oil and stir in onion and garlic. Saute until transparent.
    2. Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt and pepper. Bring the mixture to a boil. Cover and reduce heat to a simmer for 20 minutes or until quinoa is soft.
    3. Stir frozen corn and black beans into the quinoa mixture and continue to simmer for another 5 minutes or until corn and beans are heated through. Mix in cilantro and serve.
    Serves 4-6 people, as a side dish
