Tortellini Chicken Soup

  • 2 (14oz) cans of Chicken Broth
  • 1 (14o) can of Vegetable Broth
  • 2 cups water
  • 2 cups shredded Chicken
  • 1 carrot, sliced
  • 1 zucchini, sliced
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 2 TBSP Olive oil
  • 9 oz package of Cheese filled Tortellini
  • 1 (14.5oz) can diced tomatoes, drained OR 1 cup chopped fresh tomato
  • 2 TBSP Fresh Parsley
  • pepper
  1. In a large 4 quart pot, saute carrots for 3 minutes then add onion and garlic until onion is cooked. Add in chicken broth, veggie broth, water, pepper, parsley, tortellini, and zucchini. Cook until Tortellini is soft.
  2. When tortellini is cooked add in shredded chicken and tomatoes and cook until heated through about 5 minutes. If Carrots or Zucchini isn't soft let the soup sit on simmer for a few minutes.
This meal is very easy to sub frozen veggies and canned tomatoes if in a pinch.
