- 2 (14oz) cans of Chicken Broth
 - 1 (14o) can of Vegetable Broth
 - 2 cups water
 - 2 cups shredded Chicken
 - 1 carrot, sliced
 - 1 zucchini, sliced
 - 1 medium onion, chopped
 - 2 cloves of garlic, minced
 - 2 TBSP Olive oil
 - 9 oz package of Cheese filled Tortellini
 - 1 (14.5oz) can diced tomatoes, drained OR 1 cup chopped fresh tomato
 - 2 TBSP Fresh Parsley
 - pepper 
 
- In a large 4 quart pot, saute carrots for 3 minutes then add onion and garlic until onion is cooked. Add in chicken broth, veggie broth, water, pepper, parsley, tortellini, and zucchini. Cook until Tortellini is soft.
 - When tortellini is cooked add in shredded chicken and tomatoes and cook until heated through about 5 minutes. If Carrots or Zucchini isn't soft let the soup sit on simmer for a few minutes.
 
Serves 6
