Star Cookies Sandwich



Ingredients:
  • 3/4 cup butter, divided
  • 3/4 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt, Omit if you are using a salted butter. 
  • 1 egg
  • 1 Tablespoon milk
  • 2 teaspoons vanilla, divided
  • 2 cups flour
  • 2 cups powdered sugar
  • Green and Red food coloring, optional
Directions:
  1. Melt butter in a small saucepan over medium heat.  Reduce heat to medium-low  or low. simmer until butter starts turning light brown. About 12 minutes or so. Remove from heat and pour into a large bowl. Chill butter just to when it solidifies. 2 hours in the fridge or 45 minutes in the freezer. This step adds a slight nutty flavor to the cookies. The butter is softer after using this step as well, makes it easier to fluff up.
  2. Preheat oven to 375 degrees F. Set aside 4 teaspoons of the browned butter for the filling. Beat remaining 2/3 cup of the butter with an electric mixer on a medium high for about 30 seconds. Add in sugar, baking powder and salt (omit salt if using salted butter) mix for 30 seconds on medium high speed. Scrapping sides of the bowl occasionally. 
  3. Beat in the egg, milk, and 1 teaspoon of the vanilla. Beat in flour 1/2 cup at a time with the mixer. When the dough is made place it in some plastic wrap and put it in the fridge for 30 minutes. 
  4. on a slightly floured surface, roll out dough to 1/8 in. Using a 2in. cookie cutter and if desired a 1 inch cookie cutter punch out cookies. If using the small cookie cutter punch into the center of half the cookies. Place onto a cookie sheet.
  5. Bake for 7-8 minutes or until edges are firm. Transfer to a wire rack and let cool. 
  6. For filling, in a medium bow beat the reserved browned butter with an electric mixer for 30 seconds. Beat in the remaining 1 teaspoon vanilla and the powdered sugar until combined. If necessary, beat in milk, 1 teaspoon at a time to make the icing soft spreading consistency.  Split frosting in half and add the red and green food coloring. 
  7. To make the sandwich you put a healthy amount of frosting on half of the cookies. If using the smaller cutout, only frost the cookies without a cutout in the center. Take a cookie that isn't frosted and slightly rotate it and place it on top of the other cookie. 
Serves 16 cookie sandwiches
