Banana Bread


Ingredients:

    • 2 cups all-purpose flour
    • 1 teaspoon salt
    • 2 teaspoons baking soda
    • 1 teaspoon baking powder
    • 1 cup butter or margarine
    • 1 cups white sugar
    • 1 cup brown sugar
    • 2 cups mashed overripe bananas, I prefer my bananas to be very chunky in my bread. 
    • 4 eggs
    • 1 cup chopped walnuts (optional)

    Directions:

    1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9x5 inch loaf pans.
    2. Sift the flour, salt, baking powder and baking soda into a large bowl. In a separate bowl, mix together the butter or margarine and sugar until smooth. Stir in eggs one at a time into butter mix.  Pour half of the flour mix  into the butter mixture, stir just until blended. Add in the other half. When dough is mixed fold in bananas and walnuts. Divide the batter evenly between the two loaf pans.
    3. Bake for 60 minutes in the preheated oven or until a toothpick or wooden chopstick inserted into the crown of the loaf comes out clean. Let the loaves cool in the pans for at least 5 minutes, then turn out onto a cooling rack, and cool completely. Wrap in aluminum foil to keep in the moisture.

    Serves: 2 Loafs
