Quinoa


This is a very basic recipe for making Quinoa. I prefer to cook mine with a 1:2 ratio. For two adults and two kids I will use 1/2 cup Quinoa with 1 cup Chicken/veggie stock. Bring stock to a boil and add Quinoa and bring back to a boil. Turn heat down to a medium-low and cook for 25-30 minutes. The Quinoa should be soft but have just a slight crunch.

If you don't have pre-washed Quinoa then you should soak them for an hour before cooking. Quinoa can be bitter sometimes and soaking them helps remove the shells and some of the bitterness. Drain in a fine mesh strainer! You can cook Quinoa with water but cooking it in a chicken or veggie stock it helps add flavor.

Anytime I have a recipe where I'm to serve over rice I use this recipe.
