Mediterranean Quinoa


  • 1/2 cup Quinoa
  • 1 cup chicken broth
  • 1/4 cup Artichoke hearts, chopped
  • 1/4 cup Tomatoes, diced
  • 1/4 cup Olives, sliced
  • 2 tsp Balsamic Vinaigrette
  • Feta cheese, optional

  1. Bring chicken broth to a boil and add Quinoa. Cover and simmer for about 30 minutes or until Quinoa is tender. 5 minutes before Quinoa is finished cooking add artichoke hearts, tomatoes, olives and balsamic vinaigrette, stir well.
  2. When done cooking top with feta cheese and enjoy
