Ingredients:
- 1/2 cup Quinoa
- 1 cup chicken broth
- 1/4 cup Artichoke hearts, chopped
- 1/4 cup Tomatoes, diced
- 1/4 cup Olives, sliced
- 2 tsp Balsamic Vinaigrette
- Feta cheese, optional
- Bring chicken broth to a boil and add Quinoa. Cover and simmer for about 30 minutes or until Quinoa is tender. 5 minutes before Quinoa is finished cooking add artichoke hearts, tomatoes, olives and balsamic vinaigrette, stir well.
- When done cooking top with feta cheese and enjoy
