Oatmeal Bars
Ingredients:
- 3 cups old fashion rolled oats
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4-1/2 cup packed brown sugar. (depends on how sweet you like it. I prefer just over 1/4cup)
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1 3/4 cup milk
- 2 eggs
- 2 granny smith apples, diced
Directions:
- Preheat oven to 350 degrees F.
- Mix together in a large bowl all the dry ingredients until well blended.
- In a smaller bowl mix together milk and eggs.
- Add the milk mix to the dry ingredients and stir the apples. It will be runny.
- Line with Parchment paper or grease a pan no larger than 9x13. Parchment paper works best. Pour the oatmeal mix into pan and cook for 20-30 minutes or until it feels firm yet spongy.
- Let it rest for a few minutes then cut into bars and serve. Great to also cut up and save in the fridge for a snack or a regular breakfast bar on the go. Good warm or cool and reheats well in microwave.
