Oatmeal Bars

Ingredients:

  • 3 cups old fashion rolled oats
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4-1/2 cup packed brown sugar. (depends on how sweet you like it. I prefer just over 1/4cup)
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg 
  • 1 3/4 cup milk
  • 2 eggs
  • 2 granny smith apples, diced
Directions:

  1. Preheat oven to 350 degrees F. 
  2. Mix together in a large bowl all the dry ingredients until well blended. 
  3. In a smaller bowl mix together milk and eggs. 
  4. Add the milk mix to the dry ingredients and stir the apples. It will be runny.
  5. Line with Parchment paper or grease a pan no larger than 9x13. Parchment paper works best. Pour the oatmeal mix into pan and cook for 20-30 minutes or until it feels firm yet spongy. 
  6. Let it rest for a few minutes then cut into bars and serve. Great to also cut up and save in the fridge for a snack or a regular breakfast bar on the go. Good warm or cool and reheats well in microwave.
